Maryland Style Crab Cakes

1 lb backfin lump crab meat
1 tbsp chopped green pepper
1 tsp salt
1/2 tsp pepper
1 tbsp chopped fresh parsley
6 drops Tabasco sauce
1/4 tsp dry mustard
1 egg, beaten
2 tbsp mayonnaise
6 saltine crackers, finely crumbled
salad oil


Pick over crab meat to remove shells. Add green pepper, salt, pepper, parsley and mustard. Mix in combined egg and mayonnaise. Add cracker crumbs and let stand 20 minutes. Form into crab cakes. Pour oil into 10" skillet to a depth of 1/2 inch and fry cakes at 350 for 2 to 4 minutes on each side.

Drain on paper towel. makes 8 crab cakes.
