Low-Fat Pork Fajitas

1 pound pork tenderloin, cut into 1/8 inch strips and trimmed of all visible fat
1 tbsp. fajita seasoning
1 cup green, yellow and red bell peppers, sliced
1/2 onion, sliced
1 tsp. red pepper, crushed
4 flour tortillas, warmed
Fat-free, non-stick cooking spray


Spray a large non-stick skillet with cooking spray. Heat skillet over medium-high heat until hot. Add pork strips, fajita seasoning, bell peppers, onions and crushed red pepper to skillet. Stir fry about 5 minutes until pork is thoroughly cooked. Roll up 1/4 of meat mixture in each tortilla. Makes 4 servings
