1 cup uncooked rice or enough to make 4 cups cooked
2 cups sour cream
1 - 2 cups cheese, grated (yellow and white are good)
1 large can roasted chile peppers (not hot) wash out seeds and dice
1 cup pitted black olives (save a few for top)
Salt & pepper (preferably white) to taste
1 cup chapped pimento
Fold all together and turn into 1 1/2 qt. casserole. Push few olives to top and sprinkle with paprika. Bake.This recipe can be made ahead of time and refrigerated. If It has been refrigerated, bake for about 45 minutes.
Baking Time: 20-25 minutes.
