Chicken Vegatable Stew

1 Lb. boneless skinless chicken breast
1 - 26 oz. can diced tomatoes in juice
1 small bag frozen petite red potatoes
1/2 bag frozen diced peppers
1/2 bag frozen chopped onions
1/2 bag frozen baby carrots
Dried tarragon
Dried basil
Dried thyme
Chopped garlic
1/3 cup heavy cream


Place all frozen veggies in a strainer in the sink to drain and thaw. Saute bite sized chicken in a little oil until golden brown and set aside in a plate. Add the veggies and 1/2 teaspoon of garlic and saute for about 10 mins or until veggies are tender.Add tomatoes with a shake of kosher salt, tarragon, basil and thyme in a large saucepan and heat on low flame. When veggies are done, place the veggies and chicken in the large saucepan with tomatoes. Add the heavy cream and heat through. Serve and eat!
