Bran Muffins

2 cups bran, or all bran cereal
1 cup oatmeal
2 cups boiling water
1 cup shortening
2 1/2 cups sugar (may substitute honey)
4 beaten eggs
1 qt. buttermilk
5 cups flour
5 tsp. baking soda
1 tsp. salt
4 cups raisin bran cereal


Pour the boiling water over the bran and the oatmeal. Set aside to cool. Cream the shortening and sugar,mix in the eggs. Add the moistened bran and oatmeal and the buttermilk. Sift the flour with baking sodaand salt and blend into mixture. Stir well. Lastly fold in the raisin bran. Fill muffin cups 3/4 full. Place in a400° oven for 20 minutes. This batter can be stored in the refrigerator for several weeks and used asneeded.

Temperature: 400°

Baking Time: 20 minutes.
