CHICKEN MARSALA BOLOGNESE
Ingredients

1/2 tsp. salt 1/4 tsp. nutmeg 3 Tbsp. flour 4 boneless chicken breast halves (about 1 pound), pounded to even thickness 1 Tbsp. olive oil 4 slices low-fat cooked ham, such as Healthy Choice 4 slices Gruyere cheese (about 2 ounces) 1/2 cup Marsala wine
Procedure

Combine salt, nutmeg and flour on a plate. Dredge the chicken in
the mixture, and set aside.
Heat the oil in a large nonstick skillet set over medium-high
heat. Add the chicken, and cook 3 to 4 minutes on each side or
until it is evenly browned.
Place a slice of ham and cheese on each breast, then pour the
Marsala in the pan around the chicken. Reduce heat to low and
cover. Simmer 5 to 7 minutes or until the chicken is cooked
through.
Makes 4 servings.
