TORTILLA CHIP CHICKEN
Ingredients

1 Tbsp lime juice 1 Tbsp honey 1 cup crushed tortilla chips or chips from oven baked corn tortillas 2 boneless, skinless chicken breasts 1 can (15 oz) diced tomatoes 1 jalapeno finely diced and seeded 1/4 cup fresh chopped cilantro 2 garlic cloves minced 1/2 tsp dried oregano
Procedure

Preheat oven at 475. Mix lime juice and honey in shallow bowl and dip
chicken breasts one at a time. Place crushed chips in small plastic bag
and shake chicken breasts one at a time to coast. Place chicken in a
baking dish and bake 15-20 minutes until no longer pink. Meanwhile, whirl
half tomatoes, garlic, cilantro and oregano in blender briefly. Add to
sauce pan with rest of tomatoes and jalapeno and bring to a boil. Reduce
heat , cover and cook five minutes until sauce thickens. Spoon sauce onto
plate and place chicken on top with wedge of lime.
