Ingredients

4 baseball-sized potatoes, sliced into thin (e.g. 1/8") slices 4 slices smoked streaky bacon (about 4 oz.), chopped into bits 1/3 lb strong Cheddar-type cheese, grated or sliced into thin slices, 1/2 cup chopped onion milk salt & pepper to taste
Procedure

Take an oven casserole, lay enough potato slices in it to cover the
bottom. Sprinkle on some of the chopped bacon. Sprinkle on some of the
onion. Sprinkle on some of the cheese. Add a bit of salt and pepper. Make
another layer the same as above, or maybe two layers, finishing up with
the cheese layer and salt and pepper. Pour over enough milk into the
casserole to come about 1/3 the way up. Cover the casserole and put in a
350F oven for about 1 hour. This requires a non-waxy potato, one that is
is good for scalloped potatoes. I have always only ever made it this way,
but you might want to branch out and add things like sliced tomatoes, or
mushrooms. Serve with a fresh green tossed salad.
