WHOLE WHEAT FRUIT NUT BREAD


Ingredients

2/3 cup chopped pitted dates
1/2 cup chopped figs (optional)
1/2 cup chopped nuts
1 1/2 cups sifted flour
3 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1 1/2 cups whole wheat flour
1/4 cup brown sugar
1 egg beaten
1/2 cup honey
1 1/3 cups milk
3 tbsp. melted shortening
1 1/2 tsp. grated orange rind

Procedure

Mix fruits and nuts with 2 tbsp. flour. Sift remaining flour with baking powder, salt and soda. Mix in whole-wheat flour thoroughly. Add brown sugar gradually to egg and beat well. Add honey, milk, shortening and orange rind. Add to dry ingredients, mixing only enough to dampen the flour. Add fruits and nuts. Pour into greased loaf pan and bake in 350° over for 1 to 1 1/4 hours. Cool thoroughly before slicing. Temperature: 350° Baking Time: 60-75 minutes.
