QUICK CHILI
Ingredients

1 clove garlic, minced 1/2 tbsp oil 1 lb lean ground beef 1 onion, chopped 1 green pepper, chopped 1 1/2 lbs tomatoes, chopped 1 lb can red kidney beans, drained 2 tbsp. chili powder 1/4 tsp. white vinegar Dash red pepper Salt, pepper to taste 3 oz tomato paste
Procedure

Heat oil in a large sauce pan. Saute ground beef, onion and green peppers
until cooked (8 to 10 mins). Drain off fat. Add rest of ingredients.
Mix well. Cover and cook over a low heat for 1 hour. If too dry, add
more tomatoes. If too liquid, uncover and simmer longer. Serve (1) in a
soup bowl topped with grated cheese, (2) over cooked rice on a plate
topped with grated cheese, or (3) over Fritos in a bowl topped with grated
cheese.
