PERSIMMON BREAD


Ingredients

2 eggs
3/4 cups sugar
1/2 cup oil
1 tsp. baking soda
1 cup persimmon pulp
1 1/2 cups sifted flour
1 tsp. cinnamon
1/2 tsp. salt
1/2 cup chopped walnuts
1/2 cup raisins (optional)

Procedure

Blend eggs, sugar and oil together. Mix soda into pulp. Add to sugar mixture. Sift flour before measuring. Add nuts to dry ingredients and fold into persimmon mixture. Pour into oiled loaf pan. Place in a 325° oven for 75 minutes. Temperature: 325° Baking Time: 75 minutes.
