LOW-FAT FETTUCCINE ALFREDO WITH CHICKEN &BROCCOLI
Ingredients

2 cups cooked small broccoli florets 2 tbsp. butter 2 tbsp. all-purpose flour 2 cups skim milk 2/3 cup part-skim ricotta cheese 1/2 cup parmesan cheese 1/4 tsp. salt 1/4 tsp. pepper 4 cups hot cooked fettuccine 3 cups chopped cooked chicken
Procedure

Melt the butter in a saucepan over medium heat. Add flour and cook for 1 minute. Gradually add milk, stirring until well blended. Cook 15 min. or until thick, stirring constantly. Stir in cheeses, salt and pepper, and cook 5 min. or until cheese melts. Stir in broccoli, pasta and chicken.
Makes 4 - 6 servings
