CARROT POTATO PANCAKES


Ingredients

3 medium potatoes shredded
3 eggs lightly beaten
1/4 cup milk
1/2 cup all purpose flour
1 1/2 tsp. salt
1/4 tsp. pepper
3 large carrots, shredded
1/2 cup minced onion
1/3 cup minced parsley
1/2 cup sour cream

Procedure

Shred potatoes and place in water. Stir together the eggs, milk, flour, salt and pepper. Drain and squeeze out excess water from the potatoes. Add remaining ingredients. Preheat electric griddle to 375°. Grease lightly, drop by spoonfuls onto griddle. Slightly flatten into a four-inch circle. Cook until brown. Serve with sour cream. Temperature: 375°
