HOMEMADE BREAKFAST SAUSAGE
Ingredients

4 lbs ground pork OR 4 lbs lean ground turkey 8 cloves garlic, crushed or 4 tsp prepared garlic 2 1/2 Tbsp leaf thyme 1 Tbsp fennel seeds 1 Tbsp fresh or dried parsley 1/2 tsp crushed red pepper 1/8 tsp. black pepper 1/2 tsp salt 1/4 cup quick oats
Procedure

Place ground meat in large bowl. Add garlic cloves; sprinkle with remaining
ingredients. Mix well with wet hands (it won't stick to you). Form into patties
and wrap individually with plastic wrap, or place small, square sheets of wax
paper in between patties. Use immediately or freeze on a metal cookie sheet or a
flat metal tray for future use.
