Ingredients

3-cups whole wheat flour 2/3-cup unsweetened applesauce (in lieu of same amount of canola oil) 1-1/4 cups sugar (OK to reduce to 1-cup) *1/2-cup wheat germ (or oatmeal or or Kellogg's All-Bran cereal or any similar whole grain 1-cup egg substitute (in lieu of 4 med/large eggs) 2-cups mashed bananas (approx. 4 large or 5 medium) 1/2-cup coarsely chopped nuts (I use walnuts most of the time) 2-teaspoons baking soda 1-teaspoon salt 1/2-teaspoon baking powder 1-tablespoon cinnamon Optional: 1/2-cup raisins
Procedure

Preheat oven to 350 degrees. Use extra large mixing bowl. Mix dry
ingredients together. Add wet ingredients afterward with banana mash last.
Divide batter into two 8x4-inch loaf pans. Bake for one hour or until
knife/tester comes out clean )Note: if oven temp is right on 350, 60-65
minutes is long enough; otherwise, may need to add oven time in 5-10 minute
increments depending on how 'wet' batter is.
