4 large tart, crisp apples 4 large sweeter apples (not mealy ones, though) 1/2 cup granulated sugar 1/3 cup all-purpose flour 1/4 tsp. Mace 1/8 tsp. Ground Cloves 1/4 tsp. Cinnamon 2 Tbsp. Melted butter 1/8 tsp. Fresh squeezed lemon juice, strained double pie crust, unbaked
Procedure

Peel, core and slice apples, placing them in a large mixing bowl. Mix
sugar, flour, mace, cloves and cinnamon. Add sugar mixture to the apples
and mix well. Mix melted butter and lemon juice and pour this over the
apples. Mix well and let sit for at least 20 minutes while you prepare
the piecrust. Preheat oven to 450 degrees. Prepare top and bottom
crusts. Mound filling into pie shell, piling apples high, and affix the
top crust. Slash top crust a few times and brush with glaze mixture of
egg yolk with 1 Tbs. of cream. Sprinkle granulated sugar over. Bake pie
at 450 degrees for 15 minutes. Turn over down to 375 degrees and bake
about 35-45 minutes more, checking frequently to make sure crust doesn't
over brown.
