Ingredients

1/2 cup vegetable oil 1/4 cup honey 1 teaspoon vanilla 1/4 cup orange juice -- or apple juice 1/2 teaspoon ginger 1 teaspoon cinnamon 2 cups whole wheat pastry flour 1/4 cup soy flour 2 tablespoons wheat germ raisins, currants, poppy seeds, apple butter, and nuts for decoration
Procedure

In food processor, blender, or mixing bowl, combine oil, honey, vanilla,
and juice. Blend until smooth and creamy.
Combine ginger, cinnamon, flours, and wheat germ, and add to the liquid
mixture until it forms a dough. Divide dough into 4 pieces.
Preheat oven to 350F.
Roll out each piece of the dough to a 1/4" thickness. Cut each with a large
round cookie cutter; you should be able to make two 3-inch circles out of
each piece of dough, with some left over.
Place four of the circles at the top of a cookie sheet lined with parchment
paper or greased with a mixture of a few drops of liquid lecithin and oil.
Using a finger, make 2 indentations in each of the circles to form wide
eyes. Place a dab of the apple butter in each. Add little bits of the
leftover dough to the sides of the four cirles to form ears. Moisten the
joints with a little water to more effectively attach the body parts.
Attach the remaining four circles underneath the heads to form pudgy
bodies. If you are feeling creative, make fat arms and legs with leftover
dough. Use raisins, currants, poppy seeds,or nuts for additional trimming.
Bake for 10-15 minutes. Let them cool for a minute, then remove to a wire
rack. Yields 4 large bears.
