ONION MARMALADE
Ingredients

2 tablespoons butter 2 tablespoons olive oil 2 pounds onions -- halved lengthwise and thinly sliced 2 tablespoons sugar 1/4 cup fruit-based or red wine vinegar 1 cup red wine or sherry salt and freshly ground pepper
Procedure

In a large, heavy pan over medium heat saute onions in oil and butter until
onions soften and begin to color. Add sugar and continue to cook over medium
heat, stirring often until onions turn a rich brown color. Add liquid to
deglaze and continue to cook another 20 to 30 minutes until onions have
absorbed liquid and have a jam-like texture.
Makes approximately 2 cups
