COLE SLAW


Ingredients

5-6 cups coarsely chopped cabbage by hand (blender chopping makes it too fine)
4 strips bacon
1 small onion, coarsely chopped
1/3 cup vinegar
1/3 tsp pepper
Salt to taste


Procedure

Chop cabbage and onion coarsely by hand. Add vinegar and pepper and stir to coat well.Set aside. Fry bacon crisp, remove and crumble into cabbage. Cool the bacon drippings slightly and pour over the cabbage. Stir well; add salt to taste. Slaw should have a sllightly tart taste and peppery hot taste. More pepper may be added if desired. This is especially good with pinto beans and cornbread!
