BEEF BRISKET IN RED WINE
Ingredients

6 lbs. beef brisket 1 qt or bottle red wine 2 bay leaves 4 garlic cloves, slices 6 whole peppercorns 2 tbsp. brown sugar 1 tsp. salt 1 pinch oregano
Procedure

Blend ingredients together and pour over beef. Store overnight in the refrigerator turning meat occasionally.
Drain reserve liquid. Place roast in pan set in 500° oven for 1/2 hour. Reduce heat to 300° and pour 1 pint
of marinade on beef. Cover and continue roasting from 3 to 3 1/2 hours. Uncover last 1/2 hour and add
more marinade if necessary. To serve, thicken remaining marinade in pan and serve in side dish as gravy.
