LOW-FAT OATMEAL COOKIES


Ingredients

1 1/2 cups all-purpose flour
1 tsp. ground cinnamon
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
6 tbsp. unsalted margarine, softened
1/2 cup unsweetened applesauce
1/3 cup honey
1 large egg, slightly beatin
1 cup old fashioned rolled oats


Procedure

Preheat oven to 375 degrees. In small bowl, combine flour, cinnamon, baking powder and salt. In a large mixing bowl, beat margaring with mixer (or by hand) until creamy. Add in applesauce, honey and egg. Gradually add in flour mixture until dough forms. Stir in oats. Drop dough by spoonfuls on greased cookie sheets. Bake 10-12 minutes, until lightly golden. Recommendations: Add pecans, almonds, walnuts, or raisins, as you prefer. Or use very chunky applesauce.

Temperature: 375°

Baking Time: 10-12 minutes.
