CAJUN CATFISH & COUSCOUS
Ingredients

3/4 lb. catfish 2 tsp. cajun seasoning 2 tsp. olive oil 1/2 cup onions (chopped) 1/2 cup sweet green peppers (chopped) 1 tsp. garlic (minced) 1 can - 14 1/2 oz. whole tomatoes (chopped) 3/4 cup water 1 cup couscous
Procedure

Sprinkle fish with cajun seasoning. Heat oil in a nonstick skillet. Add onions and peppers; stir-fry until vegetables begin to brown, about two minutes. Stir in garlic, tomatoes and water, and bring to a boil. Cover and simmer over low heat for five minutes. Stir in couscous. Arrange fish over couscous. Cover and cook until fish turns opaque, about 10 minutes.
Cooking Time: 10 minutes.
