CHINESE SHRIMP
Ingredients

3 cups celery, chopped 1 cup chopped onion 1/2 cup water 4 oz. can mushrooms (or 1/2 fresh mushrooms, sliced) 3 Ibs. raw or frozen shrimp, cut up 6 oz. cashews, chopped 1 - 4 oz, can pimientos, sliced 1 - 5 oz. can water chestnuts, cut up 2 cans mushroom soup 1 soup can water or sherry Salt and pepper 2 cans Chinese noodles
Procedure

Cook celery and onion in 1/2 cup water until tender. If you use fresh mushrooms, sauté them in 2
tablespoons butter. Cook shrimp. Mix all ingredients except the noodles. (Can be done ahead to this
point.) Line a 4-quart casserole with 1 can of noodles. Add mixture. Cover with other can of noodles. Bake
at 350° for 30 to 40 minutes.
Temperature: 350°
Baking Time: 30-40 minutes.
