CARROT CAKE
Ingredients

4 eggs
1 1/2 cups sugar
1 1/2 cups oil
2 cups flour
2 tsp. soda
1/2 tsp. salt
1 tbsp. cinnamon
3 cup grated carrots
2 cup chopped pecans
Procedure

Beat eggs and sugar till fluffy; stir in oil. Combine dry ingredients. Sift into egg mixture. Add carrots and nuts. Pour into 2 greased and floured 9 inch cake pans. Bake at 325° for 45-50 min. until wooden pick inserted in center comes out clean. Frost with cream cheese frosting.
Temperature: 45-50°
Baking Time: 325 minutes.
