STRAWRERRY SPRING THAW
Ingredients

1/2 cup margarine, melted 1/4 cup firmly packed brown sugar 1 cup flour 1/2 cup chopped nuts 2 egg whites 1 cup sugar 1 pint strawberries, sliced 1 tbsp. lemon juice 1 tsp. vanilla 1 cup whipping cream, whipped
Procedure

In jellyroll pan stir melted margarine and brown sugar. With fork, mix in flour and nuts. Distribute over
bottom of pan. Place in a 400° oven for 15-20 minutes, stirring occasionally. Set aside to cool.
In large mixing bowl beat whites to soft peaks, gradually adding the one-cup of sugar. Add berries, lemon
juice and vanilla. Beat on high speed until triple in volume and stiff peaks form. Fold in whipped cream.
Spread all but one half cup crumbs in bottom of a 9 inch spring form pan. Top with egg white mixture. Then
sprinkle on the remaining crumbs. Freeze.
To serve: Remove ring of pan. Transfer to serving platter.
Temperature: 400°
Baking Time: 15-20 minutes.
