CRANBERRY QUICK BREAD


Ingredients

1 cup sugar
2 tbsp. melted shortening or margarine
1 egg
1/2 cup orange juice
Grated orange rind (optional)
2 cups flour
1 tsp. baking powder
1/2 tsp. soda
1/4 tsp. salt
1/2 cup chopped nuts
1 cup raw cranberries cut in half


Procedure

Combine sugar, shortening, egg and orange juice. Stir in orange rind. Sift together flour baking powder, salt. Add to first mixture with cranberries and nuts. Stir just enough to moisten dry ingredients. Do not over beat. Pour into greased loaf pan. Place in a 350° for 1 hour.

Temperature: 350°

Baking Time: 60 minutes.
