YUCATAN BEAN DIP
Ingredients

2 1/4 cups mayo
1 cup parmesan cheese
1 - 7 oz can chipotle peppers in puree
1 1/2 quarts black beans
1 tbsp. chili powder
1 tbsp cayenne pepper
2 tbsp. salt
1/2 lb. grated chihuahua cheese (can substitute monterey, jack or sharp cheddar)
Procedure

Puree the Chipotle peppers and 1/2 of the beans. Fold all ingredients (except grated cheese) together. Sprinkle top with cheese. Bake at 300 for 40 minutes.
Temperature: 300°
Baking Time: 40 minutes.
