LEMON JELLY
Ingredients

1 oz (2 tbsp.) granulated plain gelatin
1/2 cup cold water
1/2 cup boiling water
2 1/4 cup ice-water
1 cup sugar
3/4 cup lemon juice
A little lemon rind
Procedure

Soak gelatin in cold water until soft. Add to boiling water and stir until thoroughly dissolved. Add sugar and stir until dissolved. Remove from heat. Add ice-water, lemon juice and lemon rind and mix thoroughly. Pour into container which has been dipped into cold water. Cover and chill.
