Zucchini Bread


4 eggs, beaten 1 tsp. cinnamon
2 cups sugar 3/4 tsp. baking powder
1 cup vegetable oil 2 cups grated zucchini, carrots, and walnuts
3 1/2 cups flour 1 cup raisins
1 1/2 tsp. baking soda 1 tsp. vanilla
1 tsp. salt


Mix eggs, sugar, and oil in a large bowl. Combine dry ingredients. Add dry ingredients to wet ingredients alternately with the grated zucchini. Stir in raisins and vanilla. Pour into two greased and lightly floured loaf pans. Bake at 300 degrees, 55 minutes.
