Vanilla Slices

250g puff pastry
1 1/2 cups custard powder
1 cup sugar
1 liter milk
2 eggs separated
Icing sugar


Divide puff pastry in two. Roll each thinly to line 2 scone trays.Mark into 2 inch squares. Bake at 450 degrees for 10-15 minutes or until golden. Cool on wire rack. Blend custard powder, sugar, and milk together in saucepan. Bring to the boil simmer 2 minutes stirring continuously.Remove from heat, add egg yolk beat well.Cool to lukewarm, fold in stiffly beaten egg whites. Spread custard on one piece of pastry top with the other and ice.

Temperature: 450°

Baking Time: 10-15 minutes.
