Two Alarm Chili

Ingredients

2 lb. ground beef
1/2 cup chili powder
1 tsp. garlic powder
1 tsp. onion powder
1/2 tsp. oregano
1/2 tsp. cumin
1 tsp. paprika
1 tsp. salt
1 tbsp. masa (corn flower)
1 tsp. red pepper (cayenne pepper)
1 8 oz. can tomato sauce
16 oz. water

Directions

Sear 2 pounds coarse ground or diced meat (chuck, round, stew meat, venison, turkey/chicken or meat of your choice) in large skillet or saucepan. Drain off fat. Add 1 8-oz. can tomato sauce and 16-oz. water. Stir in all spices except masa and red pepper. For mild chili leave out the red pepper. For 1-alarm chili stir in half the red pepper. For 2-alarm chili use all the red pepper. Cover skillet or sauce pan and simmer for 30 minutes. Longer for a spicier flavor. Stir occasionally. Stir masa flower into 1/4 cup warm water to make a thick but flow able mixture. Add masa mixture to chili. Simmer another 15 to 20 minutes.
