3 eggs
1 cup salad oil
2 cups sugar
2 tsp. vanilla
2 cups coarsely shredded zucchini
1 cup well drained pineapple
3 cups flour, unsifted
2 tsp. soda
1 tsp. salt
1/2 tsp. baking powder
1 1/2 tsp., ground cinnamon
3/4 tsp. nutmeg
1 cup chopped walnuts
1 cup currents
Directions
With rotary beater, beat eggs to blend. Add salad oil, sugar, vanilla. Continue beating until thick andfoamy. With a spoon stir in zucchini and pineapple. Combine flour, soda, salt, baking powder, cinnamon,nutmeg, nuts and currents. Stir gently into zucchini mixture just until well blended. Divide batter between 2greased and floured 9x5
Temperature: 350°
Baking Time: 60 minutes.
