Pumpkin Cookies (version 2)

1/2 cup sugar
1/2 cup firmly packed brown sugar
1 cup Land o' Lakes Butter (or other HIGH quality butter), room temperature
1 cup pumpkin (canned)
1 tsp vanilla
1 large very fresh egg
2 cup all-purpose white flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
3/4 cup chopped nuts (optional)


Preheat oven to 350 degrees (F). In a large bowl combine sugars & butter-beat until' fluffy. Add pumpkin, vanilla and the egg. Blend well. Add flour, baking powder and soda, and all spices. Mix well. If you have chosen to add nuts, stir in.

Drop rounded teaspoonfuls about 2 inches apart onto a parchment-lined cookie sheet. Bake these small ones at 350 for 10-12 min.
