Pumpkin Bread

Ingredients

3 1/2 C. Flour
2 1/2 C. Sugar
2 tsp Baking Soda
1 1/2 tsp Salt
1 tsp Cinnamon
1 tsp Nutmeg
2 C. Pureed Cooked Pumpkin
1 C Corn Oil
2/3 C. Water
4 Eggs
1 C. Nuts (optional)

Directions

Grease & Flour 2 loaf pans. Stir together in large bowl flour, sugar, baking soda, salt, cinnamon & nutmeg. Set aside. In second bowl mix together pumpkin, oil & water. Add eggs one at a time mixing well after each egg. Blend together dry & wet ingredients. Pour in pans. Bake at 350 for 1 hour. Check with toothpick.
