Pineapple Salsa

Ingredients

1 cup fresh pineapple, preferably very ripe, coarsely chopped
1 cup fresh pineapple, preferably very ripe, coarsely chopped
2 large tomatoes, peeled, seeded and coarsely chopped
1/4 cup red onion, coarsely chopped
1 jalapeno pepper,cored, seeded and finely chopped
1/2 cup fresh cilantro leaves, finely chopped
1/2 cup bottled Bloody Mary Mix
1 teaspoon coarse or kosher salt
freshly ground pepper
juice of 1 lime

Directions

Combine all the ingredients in a bowl. Mix well and allow to stand for 1 hour before serving. This salsa can be refrigerated, covered, for up to 1 week.

Makes about 3 cups salsa.
