Lowfat Chicken Marsala

1 lb. skinless, boneless chicken; cut into strips
1/4 tsp. fresh crushed garlic
1 tsp. lemon juice
4 tbsp. marsala wine
3/4 cup fat free chicken broth
nonstick cooking spray, butter flavor
4-5 slices lowfat deli ham, cut into strips
1/3 cup sliced white onion (optional)
1/3 cup sliced mushrooms (optional)
1/4 tsp. parsley
Salt and pepper to taste


Clean and flour chicken strips. Spray cooking spray into sautee pan. Heat over medium heat. Add minced garlic, onions and mushrooms. When vegetables begin to fry, add about half of the marsala. Increase heat to med-hi. Simmer 3 minutes. Add lemon juice, parsley, salt, pepper, and broth. Reduce heat to med and simmer until broth begins to bubble. Add chicken. Simmer about one minute each side. Add ham. Cover. Simmer about 10-12 minutes, turning chicken and gently mixing sauce about every 2 minutes. When chicken is cooked through, place chicken on plate and drizzle with sauce. Also delicious over rice or pasta.
