Low Fat Alfredo Sauce


8 oz fettuccine
1 tbs margarine
2 small cloves of garlic, minced
1 tbs all-purpose flour
1 1/3 cup skim milk
2 tbs light process cream cheese product
1 1/4 cup freshly grated parmesan cheese, divided
2 tsp chopped fresh parsley
Freshly ground pepper


Cook pasta as directed omitting salt and fat.

Melt margarine in a saucepan over medium heat. Add garlic and saute 1 minute. Stir in flour. Gradually add milk, stirring with a whisk until blended; cook, stirring constantly, 8 minutes or until thickened and bubbly. Stir in cream cheese and cook 2 minutes. Add 1 cup of Parmesan, stirring constantly until the cheese melts. Pour cheese mixture over pasta; toss. Top with remaining Parmesan, parsley, and pepper. Makes four 1-cup servings.
