Low-Fat Gingerbread Muffins


2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 cup sugar
1/2 cup chunky apple sauce
1/4 cup apple juice
1/4 cup molasses
1 egg
2 tablespoons vegetable oil
1 (16 oz.) can peaches in juice, drained and chopped


Preheat oven to 400F. Line 12 (2-1/2 inch) muffin cups with paper liners or spray with nonstick cooking spray. In large bowl, combine flour, baking powder, ginger, salt and spices. In small bowl, combine sugar, apple sauce, apple juice, molasses, egg and oil. Stir apple sauce mixture into flour mixture just until moistened. Fold in peaches. Spoon evenly into prepared muffin cups. Bake 20 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan; cool on wire rack 10 minutes. Serve warm or cool completely. Makes 12 servings.
