Light Banana Bread (version 2)


1 1/2 cup flour
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp baking powder
1/4 tsp nutmeg
1/8 tsp salt
2 egg whites
1 cup sugar
1 cup mashed ripe banana (2-3 bananas)
1/4 cup cooking oil
1/2 cup currants (optional, or use any dried fruit)


Stir together first 6 ingredients. In a mixing bowl beat together egg whites, sugar, and banana. Add oil; mix well. Stir flour mixture into banana mixture; fold in currants, if desired. Spray an 8x4x2 loaf pan with nonstick coating; transfer batter to prepared pan. Bake at 350F for 55-60 minutes or till wooden toothpick inserted near the center comes out clean. Cool in pan 10 minutes; remove from pan and cool on rack.
