Inside Out Chocolate Chunk Cookies

1/4 cup stick margarine or butter, softened
1 cup packed brown sugar
1 large egg
1 large egg white
3 tbsp. corn syrup
1 tsp. vanilla
1 1/2 cups flour
1/4 cup cocoa
1 tsp. baking soda
1/4 tsp. salt
1 cup white chocolate chunks


Preheat oven to 350 F. In a large bowl, beat margarine and brown sugar until well combined - the mixture will have the consistency of wet sand. Beat in egg, egg white, corn syrup and vanilla until smooth. In a medium bowl, combine flour, cocoa, baking soda and salt. Add to the sugar mixture and stir by hand until almost combined. Add the white chocolate and stir just until blended. Drop spoonfuls of dough about 2 inch apart on a cookie sheet that has been sprayed with nonstick spray. Bake for 12-14 minutes, until set around the edges but still soft in the middle. Do not overbake. Transfer to a wire rack to cool. Makes 1 1/2 dozen cookies.

Temperature: 350°

Baking Time: 12-14 minutes.
