Honey Almond Biscotti


2 cups all-purpose flour
1/4 cup granulated sugar
1/4 cup almonds; finely ground
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 cup whole unblanched almonds
1/3 cup honey
1/3 cup water


Combine flour, sugar, ground almonds, baking powder, baking soda, cinnamon and whole almonds. Stir together well. Add honey and water. Stir until stiff dough forms. Divide dough in half. Roll each half into log about 15 inches long. Line baking sheet with parchment paper (to help prevent burning, use a double baking sheet if you can). Place logs, well apart, on paper. Bake in preheated 350:F oven for about 30 minutes, until well risen, firm and golden. Be sure to bake fully. Cool logs slightly and place on cutting board. Cut, on diagonal, into 1/2-inch slices. Return cookies to pan, cut side down, and bake for 15 minutes longer until dry and lightly coloured.
