Curried Sausage Pie


4-6 medium potatoes
2 medium onions
1 kg sausage meat
1 Tbs curry powder
1 Tbs brown sugar
400 g apple sauce
1 Tbs butter
ground black pepper
1/2 cup milk
1/2-1 cup grated cheese


Thinly peel the potatoes, cut in even-sized pieces, and cook in lightly salted water. Slice the onions thinly. Spread half the onion into a roasting pan or large shallow baking dish. Working with wet hands, form the sausage meat into walnut size sausage shapes or blobs and arrange these over the onion slices, in one layer. Cover with the remaining onion. Mix the curry powder and brown sugar and sprinkle evenly over the sausages, then spread with the apple sauce (2 cups of drained cooked apple may be used.) Drain and mash the cooked potatoes with the butter, pepper and milk. Spread the potato evenly over the sausages, swirl or roughen up the top, then sprinkle with the grated cheese. Bake, uncovered, at 180 C for 1 hour.
