Chicken Wings


4 tablespoons paprika
1 tablespoon ground black pepper
1 1/4 tablespoons celery salt
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
1/2 tablespoon dry mustard
1/2 teaspoon Cayenne, or to taste
1/2 teaspoon lemon peel
3 pounds chicken wings, up to 5 lbs
Tabasco sauce, lots


Oven: 350 degrees Mix dry ingredients in a small bowl. Wash chicken and pat dry. Rub chicken all over with the spices. Cover and refrigerate for one hour. Place chicken in a baking dish and cover completely with Tabasco sauce. Cover and refrigerate for an hour or as many as 24 hours. Remove wings from marinade. Lightly coat a cookie sheet or baking dish with cooking spray. Place wings in one layer on cookie sheet or in baking dish. Place rack in the center of the oven. Preheat oven to 350 deg. Bake the chicken in oven for 45 minutes. Remove, preheat broiler and broil chicken wings until crispy.
