Chicken Salad with Mango


1/3 cup mayonnaise or salad dressing
2 green onions, chopped
2 teaspoons chives (optional)
2 cups cooked chopped chicken
2 cups chopped ripe mango
1 large tomato, chopped
1 medium-sized green pepper, chopped
1/3 cup vegetable oil
1 tablespoon vinegar
1 tablespoon lemon juice
1 teaspoon sugar
Lettuce or spinach leaves


Combine mayonnaise, green onions, and, if desired, chives; chill. Combine chicken, mango, tomato, and green pepper in a large bowl. Combine oil, vinegar, lemon juice, and sugar in a jar. Cover and shake vigorously. Pour over chicken mixture; chill at least 30 minutes. Spoon chicken salad mixture onto a lettuce- or spinach-lined plate. Top with mayonnaise mixture.
