Cherry Biscotti


1 cup castor sugar
2 eggs
2 cups flour
1/2 cup slivered almonds
1/4 cup red glaceed cherries
1/4 cup green glaceed cherries


Grease and light lightly flour and oven tray, shake off excess flour. Beat sugar and eggs until combined. Stir in sifted flour, baking powder, almonds and cherries. Mix to a soft dough. Knead on a lightly floured surface until smooth but still slightly sticky. Divide dough into two portions. Roll each portion into a 20cm log shape. Place each portion about 10cm apart on the tray. Cook at 180 C, for about 30 minutes and cooked when tested with a skewer; cool on a wire rack. Using a serrated knife, cut logs into 1cm thick slices. Place on tray and cook at 150 C, for about 20 minutes, turning halfway through cooking, or until crispy and dry; cool on a wire rack.
