Carrot Potato Pancakes

3 medium potatoes shredded
3 eggs lightly beaten
1/4 cup milk
1/2 cup all purpose flour
1 1/2 tsp. salt
1/4 tsp. pepper
3 large carrots, shredded
1/2 cup minced onion
1/3 cup minced parsley
1/2 cup sour cream


Shred potatoes and place in water. Stir together the eggs, milk, flour, salt and pepper. Drain and squeezeout excess water from the potatoes. Add remaining ingredients. Preheat electric griddle to 375°. Greaselightly, drop by spoonfuls onto griddle. Slightly flatten into a four-inch circle. Cook until brown. Serve withsour cream.
