Broccoli Rice Casserole
2 large onions, chopped
1/4 cup margarine or butter
2 pkgs. frozen chopped broccoli (10 oz.)
1 1/2 cans cream of mushroom soup
3/4 lb. Velveeta cheese, cut into small pieces
1 cup cooked rice
Cook rice and set aside. Saute onions in margarine or butter in the microwave. When the onions are clear, add broccoli and stir until broccoli is very hot; pour this into a large bowl and add mushroom soup. Now melt cheese in your previous bowl and stir until melted. Mix all together with rice and pour into a greased 9x13 casserole pan. Bake at 350F for 35-40 min or bubbly.
