Beef Enchilladas

Ingredients

1 lb. ground beef
2 lb. grated mild cheddar cheese
1 medium onion
1 - 4 oz can chopped green chilies or 3 medium fresh green chilies
1 clove garlic or 1 tbsp. garlic powder
1 tbsp. chili powder
1 pack of corn tortillas
2 - 8 oz cans enchillada sauce
Vegetable cooking oil

Directions

Preheat oven 350. Saute onions in a frying pan until color changes. Add beef, chili, garlic, and chili powder. Cook until Beef is done. In a sauce pan bring enchillada sauce to a light boil. When boiling begins place the burner on medium low heat. In a separate frying pan fill half way full with oil and heat. When oil is hot place one tortilla into the oil. Leave for 5 seconds then flip and leave it in the oil for 5 more seconds. Remove the tortilla and place it in the sauce. Soak the tortilla for a second making sure the whole tortilla is covered then remove and place in a baking dish. The place the beef mixture and some cheese in a line on the tortilla and roll the tortilla up. Repeat until baking dish is filled. When finished take the remaining enchillada sauce and pour it over the rolled tortillas. Then cover the tortillas with cheese. Place in the oven and cook until cheese is fully melted. Serve.

Temperature: 350°

Baking Time: About 5 minutes.
