Banana Bread with Buttermilk


1 cup margarine
2 1/2 cup sugar
1 1/2 tsp. baking soda
3 cup sifted flour
1 tsp. salt
4 egg yolks, beaten
6 Tbsp. buttermilk
2 tsp. vanilla
2 cup mashed ripe bananas (4 to 5)
1 cup chopped nuts (optional)
4 egg whites, beaten


Cream margarine and sugar. Combine flour, salt, and baking soda; add to creamed mixture, alternating with egg yolks and buttermilk. Add vanilla, bananas, and nuts (optional). Fold in egg whites. Pour into greased loaf pans and bake at 325 degrees for 1 1/2 hours. Makes 2 large or 4 miniature loaves.
