Banana Bread (version 5)


1 cup sugar
1/2 cups butter (softened somewhat)
2 eggs, slightly beaten
3 mashed bananas (use the ripest possible bananas for best flavour)
1/2 teaspoon real vanilla extract
11/2 cup all purpose flour
1 teaspoon baking soda
3/4 cup nutmeats or 3/4 cup semisweet chocolate chips, optional


Preheat oven to 350 F. Prepare a large loaf pan by greasing and flouring bottom and sides. Cream sugar and butter, either by hand or using an electric mixer. Add eggs, bananas, and vanilla, and mix well again. Add flour and baking soda (which I mix briefly by hand in a separate bowl usually) in increments to the mixing bowl, mixing on lowest speed until well incorporated. Pour batter into prepared loaf pan and bake one hour.
